SMOKEY WITHOUT SMOKER
Healthy, tasty, easy and yes smokey vegetarian soup.
SMOKED BELL PEPPER SOUP
INGREDIENTS:
4-5 large red bell peppers
3 shallots
1 whole garlic
1 tin of crushed bell peppers
(or tomatoes)
2 dl water
2 teaspoons sugar
200g Crème fraîche
Olive oil
Dried herbs, salt, black pepper, smoked paprika, spices you like
INSTRUCTIONS:
1. Cut peppers, shallots and garlic in half, place on a sheet, drizzle oil, put everything in 225°C oven, roast till skin turns dark.
2. Pull everything out of oven, let it cool, peel off and discard the black skin from peppers and shallots, then squeeze the roasted soft garlic, gather all the ingredients into a big pot.
3. Mix and crush everything with an immersion (stick shaped) blender inside the pot till smooth. Finish it with the crème, herbs and spices. Enjoy.
