WANT TO EAT TASTY, EASY, FAST BUT HEALTHY?
Great example of something anyone can make. Simple spicy, Indian style (inspired) cuisine. Goes great with naan bread, yogurt, rice or just by itself.
CHICKPEA CURRY
INGREDIENTS:
1 large onion
5 garlic cloves
Ginger
Can of chickpeas
Can of tomatoes
Can of coconut milk
1 tablespoon sugar
1 teaspoon salt
Handful of spinach
Plenty of spices! I recommend curry, garam masala, cumin and chili flakes.
INSTRUCTIONS:
1. Dice the onion, garlic, ginger and fry everything in oil and spices until soft, brown and fragrant. Use a large pot or a wok!
2. Pour all the cans in the pot and let it simmer for about 15 min. Add in more liquid if you want. Vegetable stock would be nice.
3. Finally turn down the heat, add the spinach, ideally frozen so it helps cool down the food. Taste for seasoning, add sugar and more spices if needed. Enjoy.
